Recipes are written by optimists. The steps that vanish first are the ones whose benefit is invisible, which is why sifting gets abandoned so early and so guiltlessly. Resting is skipped for a different reason entirely: the food is ready, the table is waiting, and patience loses. Plenty of cooks confess that measuring goes out of the window once they have made something twice. Preheating survives longer, mostly because ignoring it produces an obvious failure. What you skip usually reveals whether you cook by instruction or by feel, and how many times you have made the dish before.
